The Bone in Shin is cut from the lower part of either the front or rear leg of a cow. The cattle calves are well exercised and with it being 100% grass-fed, this cut tends to be quite lean. To keep the Bone in Shin of Beef soft, we’d recommend a slow cooking process, which also helps to create a wonderful depth of flavour. Serve with the bone in or out, depending on your preference.
